Crab Cakes

Ingredients
- 1 lb Lump Crab meat
- 1 small Onion finely chopped
- 2 Eggs
- 3 tbsp Mayo
- 1½ tsp Old Bay seasoning
- 1 tsp Garlic powder
- ¼ tsp Salt
- 1 tbsp Parsley
- 1/2 cup Panko bread crumbs
- 15 Saltine crackers crumbled up
Lemon Aioli Dip
- 1/2 cup Mayo
- 1 tbsp Minced garlic
- 2 tbsp Lemon juice
- 1/2 tsp Salt
- 1 tsp Parsley optional
Instructions
- In a large bowl, mix together the eggs, mayo, old bay seasoning, garlic powder and salt until fully combined.
- Drain and make sure no shells are in the crab meat. Transfer crab meat to the mixture.
- Add in the onion, panko crumbs, saltine crackers and parsley until fully combined.
- Form into desired size cakes. In a a large nonstick pan over medium heat, add tablespoon oil and 1 tablespoon butter.
- Cook crab cakes for 3 -5 minutes on each side until browned.
Lemon Aioli Sauce
- In a small bowl mix together all the ingredients for the sauce until fully combined.
