Sweet Potato Pie

Ingredients
- 1 lb Sweet potatoes
- 2 Eggs
- 1 stick Butter melted
- 1/2 cup Milk
- 1 1/2 cup Sugar
- 1/2 cup Brown sugar
- 1 tbsp Vanilla
- 2 tbsp Flour
- 1/2 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Salt
- 1 9 inch Deep dish pie crust unbaked
Instructions
- Boil sweet potatoes whole with the skin on for 30 – 40 minutes or until fork tender. Once done, remove the skin and add to a large bowl.
- Preheat oven to 350°.
- Using a mixer, break up the sweet potatoes until mashed. Add in the melted butter, sugar, brown sugar, cinnamon, nutmeg and vanilla. Continue to mix until smooth and fully combined.
- Add in eggs and flour and mix until fully combined and smooth.
- Pour mixture into the pie crust and bake for one hour or until you insert a toothpick into the filling and it comes out clean.
- Allow the pie to firm up for at least 2 hour before slicing.
