Ingredients

  • 1 lb Sweet potatoes
  • 2 Eggs
  • 1 stick Butter melted
  • 1/2 cup Milk
  • 1 1/2 cup Sugar
  • 1/2 cup Brown sugar
  • 1 tbsp Vanilla
  • 2 tbsp Flour
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Salt
  • 1 9 inch Deep dish pie crust unbaked

Instructions

  • Boil sweet potatoes whole with the skin on for 30 – 40 minutes or until fork tender. Once done, remove the skin and add to a large bowl.
  • Preheat oven to 350°.
  • Using a mixer, break up the sweet potatoes until mashed. Add in the melted butter, sugar, brown sugar, cinnamon, nutmeg and vanilla. Continue to mix until smooth and fully combined.
  • Add in eggs and flour and mix until fully combined and smooth.
  • Pour mixture into the pie crust and bake for one hour or until you insert a toothpick into the filling and it comes out clean.
  • Allow the pie to firm up for at least 2 hour before slicing.
