Boil sweet potatoes whole with the skin on for 30 - 40 minutes or until fork tender. Once done, remove the skin and add to a large bowl.
Preheat oven to 350°.
Using a mixer, break up the sweet potatoes until mashed. Add in the melted butter, sugar, brown sugar, cinnamon, nutmeg and vanilla. Continue to mix until smooth and fully combined.
Add in eggs and flour and mix until fully combined and smooth.
Pour mixture into the pie crust and bake for one hour or until you insert a toothpick into the filling and it comes out clean.
Allow the pie to firm up for at least 2 hour before slicing.
