Loaded Breakfast Potatoes

Ingredients
- 9 Russet potatoes
- Cooking oil
- 1 tsp Season salf
- 1/2 tsp Garlic powder
- 1/2 tsp Paprika
- 1/4 tsp Creole seasoning
Toppings
- 1/2 Onion diced then sauteed
- 1/2 Green pepper diced then sauteed
- 3 slices Bacon thick, cooked then crumbled
- 3 tbsp Sour cream
- Green onion chopped
- 1/4 cup Cheddar cheese
Instructions
- After the potatoes have been washed and dried, remove the skin, then cut into cubes.
- Warm the oil in a very large pan on medium heat.
- Once the oil is hot, carefully add in the potatoes. Mix them around making sure they are spread evenly across the pan. At this point you can raise the heat to medium high heat.
- Season the potatoes with season salt, garlic powder, paprika and creole seasoning.
- Continue to mix around the potatoes every few minutes to avoid sticking until the potatoes are cooked through.
- Once the potatoes are done, transfer potatoes to a serving dish.
- Top the potatoes with cheese, onions, green peppers, sour cream, bacon crumbles and green onion (optional).
