Honey Chipotle Chicken Tenders
Ingredients
- 1½-2 lbs chicken tenderloins
- oil for frying
Wet Batter
- 2 eggs
- 1 cup buttermilk
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ½ tsp creole seasoning
Dry Batter
- 2 cups flour
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp salt
- 1 tsp creole seasoning
Honey Chipotle Sauce
- 1 cup ketchup
- ½ cup honey
- ½ cup brown sugar
- 1 tbsp chipotle pepper in adoba sauce only the sauce from the can
- 1 tbsp apple cider vinegar
Instructions
- In a large bowl, add all the ingridiens for the wet batter and mix until combined. Add in the chicken tenderloins and sit aside.
- In another large bowl, add all the ingredients for the dry batter and mix until combined.
- In a small saucepan on medium heat, add all the ingredients for the honey-chipotle sauce. Mix until fully combined and bring to a simmer for 2-4 minutes. Cut off the heat.
- Batter the chicken tenderloins in the dry batter and fry for 4-6 minutes. Be sure not to fry too many at a time so they all can fry evenly.
- When frying the last batch of chicken cut the heat back on for the sauce, allowing it to get hot.
- In a large bowl add the fried chicken tenders and pour the sauce over the chicken. Toss until fully combined.
- Serve with ranch.
